Squash Lasagna

Weep, ye bachelors! For what did you eat for dinner last night? You smeared a bagel with tartar sauce and piled a can of tuna on top and called that "tuna salad." Shmuck! You should have gone home to Mom. She might have been cooking something like this...

SQUASH LASAGNA: Slice up 2 small, fresh, firm zucchini and 2 smallish yellow squash and batter-fry them. Layer the slices in a pan with a mixture of cottage cheese, parmesan and mozzarella cheeses. Top with Ragu sauce and a little more cheese and bake until fabulous.

EASY APPLE CRISP: Cover the bottom of a greased cake pan with apple slices. Sprinkle cinnamon sugar over the top, then a dry cake mix (butter-pecan is recommended!), and finally a melted stick of butter. Bake until crisp.

Observe that Mom does not choose to share oven temps, times, or measurements of anything. She doesn't go into details about what "batter-fry" means. Why not? Answer: This is how she maintains her "mom-opoly" on the comfort food that sounds so good, you can almost taste it. Weep, friend, because you probably could have made this with little more trouble than it took to make your (ha, ha) tuna salad. If only you knew how. And since Mom looks set to carry that secret to her grave, you know where you have to be at suppertime!
